1/2 c shortening
1 1/2 c sugar
1/2 tsp salt
1 egg
1 tsp baking soda dissolved in 1 c of sour milk
1/4 c candy sprinkles (adds rainbow colors to the cake)
2 c plus 1 tbsp flour
3 c rhubarb cut in small pieces*

Topping: 1/3 c sugar, 1/3 c chopped nuts, 1 tsp cinnamon

Cream shortening and sugar. Add salt and beat in egg, add soda in milk mixture and alternate with flour. Begin and end with flour. Stir in candy and rhubarb. Pour into a 9x13 greased pan, add topping over cake and bake at 350ºF for 45 minutes.
