40 asparagus spears, trimmed (about 2 lb)
Cooking spray
1/4 tsp kosher salt (or margarita salt, which can also be used on the rim of a margarita glass while you're cooking)
1/8 tsp ground black pepper
2 T butter
2 tsp low-sodium soy sauce
1 tsp balsamic vinegar

Directions:

Preheat oven to 400º.

Arrange asparagus in a single layer on a baking sheet.
Coat with cooking spray.
Sprinkle with salt and pepper.
Bake for 10-12 minutes or until tender.

While asparagus is cooking, melt butter in a small skillet over medium heat.
Cook for 3 minutes or until lightly browned, shaking pan occasionally.
Remove from heat.
Stir in soy sauce and vinegar.
Drizzle over the asparagus, tossing well to coat. Serve immediately.
