Pie Crust:
-Use refrigerator pie crust or Use Jiffy Pie crust mix
Jam:
-raspberry or strawberry or your favorite (1/2 tsp.per tart)
Batter:
- 1 Stick of Margarine
-1/2 Cup Sugar
- 2 Eggs
- 1 Tsp.. Vanilla
Dry Ingredients:
-1 Cup Sifted FLour
-1 Tsp. Baking Powder
-1/2 Tsp. Salt
Frosting:
- 1/2 Cup vegetable shortening solid
- 1/2 Cup Margarine
- 1 Tsp. Vanilla
- 2 Tbsp. Water
- 4 Cup Sifted Confectionery Sugar

Pie Crust:
Refrigerated Pie Crust - Roll it out to make it a little thinner than how it comes from the package. Cut them into circles. Put the circles in the tart pan/shallow cupcake pan.
(If using Jiffy mix follow directions on the box)
Jam:
- Put 1/2 Tsp. of Jam on to each tart.
Batter:
- Cream the Margarine.
- Beat in sugar until light and fluffy.
- Beat in egg one at a time.
- Add vanilla after the eggs.
Dry ingredients:
- Mix dry ingredients in a separate bowl.
- Fold dry ingredients into batter mixture. (if too stiff add a little milk but it will be a little stiff - like bread dough)
- Spoon a small scoop (pampered chef small scoop) of batter on the top of the jam.
Bake:
- Bake at 350º for about 25 minutes...check after 20(depends on oven)
Frosting:
-Mix shortening & margarine first.
- Add vanilla and water
- Add confectionery sugar 1 cup at a time until well mixed.
- Once cooled frost the maid of honor tarts.
