1 cup packed fresh mint leaves
1 cup packed cilantro leaves
1/2 cup chopped scallions, tender tops included
1/4 cup fresh lime juice
1 Tbs. honey
3 finely chopped garlic cloves
2 tsps. cumin
2 sticks butter, melted & slightly cooled
salt and pepper to taste
8 chicken breast halves

1. Combine mint, cilantro, scallions, lime juice, honey, garlic & cumin in a food processor or blender. Process until pretty smooth. Add the butter, a little salt and some ground pepper. Process again til well blended. Set aside one cup of the mint mixture.

2. Put the chicken into a glass or plastic bowl, and pour the rest of the mint mixture over it. Turn the chicken to coat it on all sides. Cover & refrigerate the chicken and the reserved mint mixture for 2 to 24 hours.

3. Let the chicken and mint mixture reach room temperature. Cook the chicken on a grill and top with a dollop of the reserved mint butter.

This is a very different grilled chicken recipe. Jim and I loved it, the kids not so much. It makes way more butter sauce than you need, so you can cut it down. Also, I used chives instead of scallions, cause I had them in the garden.
