2c sugar,
1c butter,
1 T grated lemon peel,
1/4c lemon juice
1 tsp. vanilla
2 eggs
3 1/4c flour
1tsp. salt
1 tsp soda
1 tsp cream of tartar

Directions:
Directions:
Cream the butter and sugar in a large bowl until smooth. beat in eggs until well mixed. Stir in lemon peel, lemon juice and vanilla. Add in the dry ingredients mixing until well blended. Chill one hour. Preheat over to 325ºF (170ºC or 3 on the oven). Roll dough into 1" (2.5cm) balls and roll in remaining sugar to coat. Place 2" (5cm) apart on cookie sheet and flatten to 1/2" (1cm) thick using the bottom of a glass. Bake 15-20 minutes or until lightly golden. Cookies will be soft in the center. Cool 2 minutes and remove from sheet to cooling rack.
