1/4c chopped green pepper,
1/4c chopped red pepper,
4-5 garlic cloves minced,
2 scallions minced,
1 T olive oil,
2 T butter,
2 T flour,
1 1/2c milk,
1c cheddar cheese shredded,
1/4 tsp. Tabasco sauce,
2 T Jalapeņo peppers minced,
1/4 tsp salt
pinch cayenne pepper
pinch paprika

Directions:
Directions:
Saute green and red peppers, scallions and garlic in the olive oil until tender but not browned, set aside. In sauce pan melt the butter and stir in flour, then quickly add milk stirring constantly as if making a basic white sauce. Stir in cheddar cheese until melted. Add remaining ingredients stirring mixture well. Serve hot over any desired Mexican dish or as a dip for chips or pita bread or over taco chips as nachos.
