1 cup shredded, cored, unpeeled apples
2/3 cup sugar
1/2 cup chopped cranberries or craisins
1/2 cup shredded carrot
1/2 cup chopped walnuts
1 1/4 cups flour
1 1/2 tsp. baking powder
1 tsp. soda
1 tsp. cinnamon
1/4 tsp. salt
1 egg, lightly beaten
1/4 cup cooking oil

Directions:
Directions:
Stir together apples and sugar. Add cranberries, carrots and nuts. Sitr to combine. set aside.
Stir together flour, baking powder and soda, cinnamon and salt. Stir flour mixture into fruit mixture. In a small bowl, combine egg and oil. Add to fruit mixture and stir till combined.
Spoon into muffin tins. bake at 375º for 22-25 minutes. Makes 10-12 muffins.
