3 Egg whites 2 cups granulated sugar
1/4 cut cool water 1/2 teaspoon cream of tarter.

Whisk together all 4 ingredients in a large metal bowl , place over a pot of simmering water: beat (I used a hand mixer) until mixture registers 160 degrees on an instant-read thermometer, about 7 minutes, Tint (if desired) and pipe onto cupcakes or cake.
