A selection of fresh vegetables of choice - e.g. pumpkin, zucchini, carrot, peas, squash, broccoli, cauliflower etc.
Potato
Grated Cheese
Paprika

Directions:
Directions:
Preheat oven to 180ºC
Chop and slice your selection of fresh vegetables and place into a microwave safe and ovenproof dish. Cube the potatoes and place on top of the other vegetables.
Cover with clingwrap and microwave for 10-12 minutes.
After removing from the microwave, sprinkle with the grated cheese to cover the top of the potatoes. Sprinkle the paprika over the cheese (this helps it to brown nicely)
Bake, uncovered, in the oven for 10-15 minutes.

This Veggie Bake can be made as big as, or as small as you like. It's delicious served with steak for dinner, on it's own, and can even be reheated!
