2 (8oz.) pkgs. cream cheese, softened
3/4 cup sugar
1 tsp. vanilla
2 eggs, slightly beaten
25 or so - vanilla wafers cookies
25 or so - paper cupcake holders
1 (21 oz.) can cherry pie filling

Preheat oven to 350 º. Take your standard muffin pan and place a paper cupcake cup in each cup. Insert one vanilla wafer into every muffin cup. Mix the cream cheese, sugar, vanilla, and eggs until creamy. Pour creamed mixture into the bottom of your waiting cupcake holder over the top of the vanilla wafer. Fill about half full. Bake about 28 to 30 minutes, or until they become slightly browned. When cooling, a small indent will occur on the top of your cheesecake. After cooled, add the pie filling by spoonfuls on top. Any flavor of pie filling may be used. Refrigerate.

Note: This is very festive at Christmas time or may be used as a quick and easy dessert. It travels well. It is great for something fast.
