"As viscous as motor oil swirled in a swamp, redolent of burnt bell peppers nested in by incontinent mice and a finish reminiscent of the dregs of a stale can of Coca-Cola that someone has been using as an ashtray. Not a bad drink, though."--Excerpt from "The Moose Turd Wine Tasting" by T. A. Nonymous

Ingredients:
Ingredients:
1 pkgs Spice cake mix
1 lb can pumpkin
1/2 c. brown sugar
1/2 c. oil
3 eggs
1/2 c. nuts (optional)

Topping:
1/4 c. sugar
1/4 c. brown sugar
1/2 c. flour
1/2 tsp. cinnamon
1/4 c. butter cold

Directions:
Directions:
Mix cake ingredients on low for 1 minute, then high speed for 2 minutes. Pour into greased and floured 13x9 pan. Blend topping ingredients with a fork and sprinkle on top. Bake at 350 degrees for 40 minutes. We like to double the streusel topping!

Note: The spice cake mixes are getting harder to find so I always buy several when I do find them. I always have a couple cans of pumpkin in the pantry. This is an easy, quick desert when you need something last minute!
