2 cups rice
5 cups water
1/2 tsp. salt

1 lb. diced pork
1/2 onion, diced
1 can pineapple chunks
1/2 cup vinegar
1/2 cup brown sugar
1/4 cup soy sauce
1/4 tsp. dried ginger
1/4 cup cornstarch
1 1/2 cups water
1 can sliced water chestnuts
1 green bell pepper
1 red bell pepper
salt and pepper to taste

Directions:
Directions:
In medium saucepan, add rice, water, and salt. Bring to a boil. Reduce heat to low, simmering for 20 minutes until water is absorbed and rice is tender. DO NOT STIR WHILE COOKING. When finished, fluff rice with a fork.
In a large skillet, brown the pork. Add onion and cook until transparent. Add juice from the pineapple, vinegar, soy sauce, sugar, ginger, salt, and pepper. Combine cornstarch and water, then stir into skillet mixture; add water chestnuts, bell pepper, and chunks of pineapple.
Serve sauce over rice.

Note: Freezes well. Freeze rice separately from sauce.
