1 T. minced garlic
2 T. olive oil
1 pound chicken
1 can water chestnuts
1 onion
1 green pepper
8 T. soy sauce
1/8 tsp. ginger
1/2 lemon
1 can chicken broth
3 T. corn starch
rice (white or brown)

Directions:
Directions:
Saute garlic cloves in olive oil for two minutes on medium heat. Dice chicken and cook until done. Add water chestnuts, onion, green pepper, soy sauce, and ginger. Squeeze lemon and add to chicken. Add corn starch to chicken broth. Stir and add to chicken. (Make sure it is mixed well). Bring to a boil stirring regularly. Serve over rice.
