6 oz. Cooked shrimp extra large, cut into 4 pieces
6 oz. Cooked jumbo sea scallop extra large, cut into 4 pieces
6 oz. Jumbo lump crab meat
1 orange
1 lemon
1 lime
1 tbsp. extra virgin olive oil
1/4 tsp. sugar
1/4 tsp. kosher salt
1 pinch cayenne pepper
1/4 red bell pepper minced
6 leaves radicchio or other lettuce
2 tbsp. chopped fresh fine herbs

1. Zest 1/2 of the orange, 1/2 of the lemon, 1/4 of the lime and chop fine
2. In a bowl squeeze the juice from 1/2 of the orange, 1/2 of the lemon and 1/4 of the lime
3. Add the zest, sugar, salt, cayenne pepper and bell pepper
4. While stirring slowly, mix in the olive oil and then gently toss with the seafood.
5. Dip the rim of a martini glass in water and then dip in the chopped herbs to create a rim effect similar to the salt on a margarita
6. Place a leaf of radicchio in the glass, and spoon in the seafood mixture
