-2 1/2 pounds boneless, skinless chicken breasts, cut into about 4 large chunks per breast
-7 cloves garlic, crushed
-3 tablespoons fresh rosemary leaves stripped from stems
-3 tablespoons extra-virgin olive oil, eyeball it
-1 lemon, zested and juiced
-1 tablespoon grill seasoning blend (I use Montreal Chicken Seasoning)
-1/4 cup vodka
-1/4 chicken broth

-Preheat oven to 450ºf. -Arrange chicken in a baking dish big enough to comfortably fit the pieces on bottom in 1 layer (I use the pyrex but i suppose it doesn't matter). -Add garlic, rosemary, olive oil, lemon zest and grill seasoning. -Toss to evenly coat the chicken with all ingredients, then place in oven. -Roast 20 minutes. -Add vodka, chicken broth and lemon juice to the dish and combine with pan juices. -Return to oven and turn oven off after about 5 min. -Let stand 5 minutes longer then remove chicken from the oven. -Serve w/ rice or whatever spooning pan juices over the chicken pieces.
