1 c cooking oil
1t cinnamon
4T hot water
21/2 c sifted flour
1/4 t salt
2 sugar
4 eggs(separated
1t nutmeg
1 1/2c grated raw zucchini
1 c nuts 3 t baking powder
1 t vanilla

Frosting 8oz cream cheese
1 stick butter
1t vanilla
1/2 c nuts
2 c powdered sugar

Combine oil and sugar. Beat until smooth. Add egg yolks, Blend Add hot water & dry ingredients which have been sifted together, Stir in zucchini,nuts and vanilla. Beat well. Beat egg whites till stiff . Fold into mixture. Bake 25 min at 350 or until done. Put in jelly roll pan sprayed with Pam
