1 c. sugar
2 Tbsp. corn starch
½ c. cherry juice
3 c. canned or frozen pie cherries, well drained (save ½ cup juice)
2 tsp. butter
1/8 tsp. almond extract
Red food coloring (optional)

Directions:
Directions:
Mix sugar and cornstarch together in a heavy saucepan. Gradually stir in cherry juice. Heat to boiling while stirring constantly to scrape bottom of pan and prevent scorching. Cook, stirring occasionally, until thick and clear. Remove from heat.

Add cherries, margarine, extract and food coloring, if desired. Stir briefly to blend. Pour filling into 9 inch prepared crust. Top with crust, flute edges and cut a slit in the top for a steam vent. Bake at 425 degrees for 15 minutes and then 350 degrees for 45 minutes. Cover edges of crust with foil after the first 15 minutes.

Note: To use fresh pie cherries, substitute 4 cups washed, pitted and well drained fresh cherries.
