2 lb beef round steak
1/4 c. all-purpose flour
2 T cooking oil
2- 16 oz. can diced tomatoes
1 medium onion, sliced and separated into rings
1 cup sliced celery
1 cup sliced carrot
1 tsp. dried thyme, crushed

Directions:
Directions:
Cut meat into 8 serving size pieces. Trim fat. Combine the flour, salt, and pepper. With a meat mallet, pound flour mixture into meat. In a large skillet brown meat on both sides in hot oil. Cook until meat is cooked through (but will not be tender. Drain fat. Add undrained tomatoes, onion, celery, carrot, and thyme. Cook over low heat about 1 1/4 hours or till meat is tender. Skim fat. Serve with hot rice or noodles. Makes 8 servings.
