1 egg, beaten
2 T. Parmesan cheese
1 cup Italian flavored bread crumbs
4 boneless, skinless chicken breast halves, pounded.
Butter-flavored cooking spray
4 Slices mozzarella cheese
1 1/4 c. whipping (heavy) cream
2/3 cup parmesan cheese
2 tsp. dried parsley
1/4 tsp. pepper

Directions:
Directions:
Mix Parmesan cheese and bread crumbs together in a bowl. Dip chicken breasts into beaten egg and then into bread crumb mixture. Place breaded chicken on parchment-lined baking sheet and spray with butter-flavored cooking spray. Bake at 350 degrees in convection oven or 375 in conventional oven until juices run clear and chicken is no longer pink.

While chicken is baking -- In a large saucepan, mix together whipping cream, parmesan cheese, parsley, and salt and pepper. Cook until mixture gets hot and thickens.

Transfer chicken to foil pans. Place slice of mozzarella cheese on each chicken breast and cover each breast with parmesan cream sauce.

Cover with foil. Freeze.

Baking directions: Preheat oven to 350 degrees. Bake for approximately 25 minutes or until heated through.
