1 Stick of Butter
Milk
salt and pepper
sour cream (optional)

Peel potatoes and cut into quarters or a little smaller, depending on the size of the potato. Put the potatoes into a pot that will easily accommodate them with a little room left over (I use my 8 qt. stockpot). Cover with water. Add salt to the water - at least 2 teaspoons. Cover the pan. Bring the water to a boil and then reduce to low and cook for about 20 minutes. Poke the potatoes with a fork to check for doneness. When fork tender, drain all the water. Add the butter and at least 1 C milk. Using a mixer or hand-held potato masher, start mashing the potatoes. Add more milk a little at a time until you have the consistency you prefer. Add more salt if needed and add pepper to desired taste. You can add a couple of heaping tablespoons of sour cream if desired.
