2 1/2 lbs beef chuck, cut into 1/2inch pieces
2 ts salt
2 T salad oil, divided
1 lb ground beef
2 medium onions, chopped
2 green peppers, chopped
1 celery rib, sliced thin
5 garlic cloves, minced
3 T Mexican chili powder
2 ts cumin
1 1/2 ts sugar
3/4 ts cayenne pepper
1/8 ts coriander
1 large can diced tomatoes w/juice
1 cup each beef broth, chicken broth
1/2 ts red pepper sauce
1 can chili beans
1 can kidney beans

Fry meat until brown, add onions, celery. Add all spices, rest of ingredients. Cook 2 hours until meat is tender. If too thick, add tomato juice.
