2 lbs. ground beef (you can use the chili grind if you prefer)
1 yellow onion, finely diced (you can substitute 1 tbsp. dried onion flakes if you don't like chopping the little devils)
1 clove fresh garlic, finely minced or 1/4 teaspoon garlic powder
1 (8 oz.) can of tomato sauce
2 c. water
2 tsp. paprika
4 tsp. cumin
1/2 c. chili powder
1 tsp. ground red pepper
2 tbsp. masa harina flour
1/4 c. hot water

Directions:
Directions:
Brown beef, onion and garlic in a Dutch oven. Add tomato sauce, 2 cups water and all spices. Mix well, cover and simmer for 30 minutes stirring occasionally. Dissolve the masa harina flour in the hot water and add to chili. Mix well, cover and simmer another 15-20 minutes.

Any of the spices may be adjusted to fit your taste. I usually add extra ground red pepper since my family doesn't really need their stomach lining. If, like my husband, you are not a purest and really NEED beans in your chili you can make a separate pot of beans like I do. When serving those that want the beans I just put them in the bottom of the bowl and then add the chili. As a good wife or hostess I wouldn't want to embarrass them in front of everyone else.

Serve with chopped onion, grated cheese, chips and/or crackers.
