Chicken Meatballs

2 lbs ground chicken breast
4 cloves garlic; minced
medium onion; minced
3 scallions; minced
1 Tbsp pickled ginger; minced
4 Tbsp teriyaki sauce
1/4 cup water chestnuts; minced
½ red bell pepper; minced
2 Tbsp Thai basil; chopped
2 eggs
2 packets plain instant oatmeal (or 1/2 cup instant oats)

Sauce

3 cups chicken broth
4 Tbsp rice wine vinegar
4 Tbsp teriyaki sauce
2 Tbsp scallions; minced
1 Tbsp pickled ginger; minced
4 cloves garlic; minced
1 tsp red pepper flakes
3 Tbsp sugar
2 Tbsp cornstarch

Enough instant rice for each person to have a 1 1/2 cup cooked serving.

At home:

For meatballs:
- Mix ingredients and allow to sit (in fridge) overnight
- form into bite sized balls and pan fry in canola oil

For sauce:
- Mix ingredients together and pour over the cooked meatballs (in the pan)
- Allow the sauce to thicken

Place meatballs and sauce into food storage container and refrigerate.

In camp:
Reheat meatballs with sauce.
Make instant rice per package directions. Make enough rice for each person to have a 1 1/2 cup serving (cooked).

Serve meatballs and sauce over instant rice.
