(Oscar is our favorite chef who worked in an Italian restaurant in Georgetown)

4-6 fillets of fish (Tilapia works well, but any thin sliced fillet will do. You can even make this with chicken or Turkey fillets)
1/2 cup lemon juice
1 cup water
1 cup white cooking wine
2 Tbsp Capers
Flour
1/4 cup Olive oil

Directions:
Directions:
Evenly coat the filets in flour and place in a pan of heated oil until light brown on both sides, and remove from pan. Place on paper towels to soak up any oil

After all filets are cooked, add the water, wine, and lemon juice to remaining olive oil in pan. Bring to rapid boil. Add capers. Add flour as needed to thicken sauce, and remove from heat.

Place filets in pan with sauce and serve with fresh vegetables or pasta.
