1 egg white,
1 tsp. finely grated lemon peel,
21/2 c. powdered sugar,
2 tbl. apple juice,

Directions:
Cream butter with 1/4 c. powdered sugar. Beat in unbeaten egg white, apple juice, lemon peel, and remaining sugar until mixture is fluffy and of spreading consistency.


spread on the top and sides of the filled cake. serve.
