Shortbread Base:
1 1/2 Sticks Cold Butter
2 Cups all-purpose Flour
1/2 Cup Brown Sugar (lightly packed)
1/2 Tsp. Salt

Filling:
6-8 Granny Smith Apples (peeled and sliced thinly)
2/3 Cup Granulated Sugar
1 Tsp. Cinnamon
3 Tbsp. Flour
2 Tbsp. Butter

Topping:
1/2 Cup Butter (softened)
1/2 Cup Brown Sugar (firmly packed)
1 Cup Flour

Base:
Cut butter into flour, sugar and salt with a pastry cutter until small lumps form. Press shortbread into a greased 9X13 baking pan. Bake in the middle of a 350º oven until golden, about 20 minutes.

Filling:
Place apples into a large bowl. Mix sugar, cinnamon and flour together. Sprinkle sugar mixture over the apples and stir. Let sit about 5 minutes. Place on top of the warm shortbread crust. Dot with the butter. Sprinkle topping on.

Topping:
Cream butter and sugar together with a fork. Add the flour and mix until crumbly. You may need to use your fingers. Sprinkle over apple filling. Place cookies back in the 350º oven and bake an additional 50-60 minutes. Cool completely before cutting.
