4 strips bacon

2 lbs lean coarse ground chuck (or hamburger)
1 large onion, chopped
1 green pepper, chopped
8 cloves garlic, minced
Grease from bacon

1 jalapeņo pepper, seeded & minced (use caution handling hot peppers - avoid touching eyes!)
2 tsp salt
1/2 tsp black pepper
4 Tbsp chili powder
2 tsp cumin
1 1/2 tsp oregano
1/8 tsp cayenne pepper

1 - 20 oz can chopped tomatoes
1 - 8 oz can tomato sauce
1 - small can tomato paste

Optional:
1 can pinto or kidney beans

Directions:
Directions:
Cook bacon until crispy & remove from dutch oven.
Brown meat, onion, green pepper, and garlic in bacon grease.
Add in remaining ingredients.
Stir well, cover, and cook approximately 1 hour.

Serves 6-8
12" oven
Prepare and cook in 90 minutes
Serve with cornbread
