2 tsp. salt
1 tsp pepper(seasoned is best)
1 tsp cumin
1 tsp cinnamon
2 pork tenderloins ( to equal 2 1/2 LBS)
2Tbs olive oil

Glaze:
1 cup brown sugar (packed)
2 Tbs minced garlic
1 Tbs Tabasco sauce

Directions:
Directions:
Mix first four ingredients and rub both tenderloins to cover all sides. Heat 2 Tbs olive oil to smoking and brown tenderloins for a total of about 4 minutes.

Mix glaze and spoon onto hot browned loins. Roast in oven until temp reads 140-150 degrees or cook 20-30 minutes, but don't cook it too long as it will dry out.

Let rest 10 minutes, then slice into 1/2 inch medallions and cover with sauce.....enjoy!
