1 Cup Oil
3 Eggs
2 Cups Sugar
2 Cups Zucchini
2 Tsp. Vanilla
3 Cups Flour
1 Tsp. Soda
1/4 Tsp. Baking Powder
3 Tsp. Cinnamon
1 Tsp. Salt

Directions:
Directions:
Beat the eggs and sugar until fluffy. Add oil and beat well. Stir in the zucchini and vanilla, mix well. Mix flour, soda, baking powder, cinnamon, and salt together. Add flour mixture gradually and mix well. Pour batter into 2 greased loaf pans.
Bake at 325º for 1 hour.
