1 lb bacon
1 large onion, chopped
1 32 oz bag O'Brien Potatoes
12 eggs, beaten
1 1/2 lbs grated cheddar cheese
1/2 lb grated pepper jack cheese
1 jar salsa

Pre-heat dutch oven.
Cut bacon into smaller pieces.
Cook bacon and onion until onion turns transparent.
Remove mixture and add O'Brien potatoes without draining bacon drippings.
Fry potatoes until golden brown.
Stir bacon and onions back in oven with potatoes.
Then, add beaten eggs.
Cover and cook until eggs are almost set solid.
Sprinkle with cheese and continue cooking until eggs are set and cheese is melted.

Serve with salsa.

Spicier Variation, add to eggs before pouring in dutch oven:
1 Tbsp chili powder
1/2 tsp cayenne pepper
1 Tbsp hot sauce
