1 egg, beaten
2 T Parmesan cheese
1 cup Italian flavored bread crumbs
4 boneless, skinless chicken breast halves, bumps pounded.
Butter flavored cooking spray
4 Slices mozzarella cheese
2 cups marinara sauce

Directions:
Directions:
Mix Parmesan cheese and bread crumbs together in a bowl. Dip chicken breasts into beaten egg and then into bread crumb mixture. Place breaded chicken in greased 9x13 foil pans. Spray with butter-flavored cooking spray. Bake at 350 degrees in convection oven (375 in conventional oven) until juices run clear and chicken is no longer pink.

Place slice of mozzarella cheese on each chicken breast and cover each breast with ½ cup marinara sauce.

Cover with foil and freeze for future use or re-heat in oven until cheese is melted and marinara sauce is bubbly.
