1/2 c. soy sauce
1/2 c. pineapple juice
1/4 c. oil
1 T. brown sugar
1 t. garlic powder
2 t. ginger
1 t. dry mustard
1/4 t. pepper
1 1/2 lbs. boneless chicken breasts,cut in 1" cubes
1 can 15 1/2 oz. pineapple chunks
1 large red or green pepper, cubed
12 mushrooms, cleaned
12 cherry tomatoes
3 c. hot cooked rice
12 - 7" skewers, soaked in water for 1/2 hour

Directions:
Directions:
Combine 1st ingredients for marinade. Bring to a boil and simmer 5 minutes. Let cool. Add chicken and marinate in the refrigerator at least 1 hour or up tp 24 hours.
Reserve marinade and return to a boil.
Alternate chicken, pineapple, and vegetables on skewers. Grill 20 minutes, basting with marinade.
Serve with hot rice.
