1 1/2 cups yellow cornmeal, medium course if you can get it
1 cup flour
1/3 cup sugar
1 tsp salt
1 tsp baking soda
1 1/2 cups buttermilk
2 large eggs
5 tbsp vegetable oil, canola is preferred
butter and honey for toppings

Directions:
Directions:
Mix the dry ingredients together.
Add the buttermilk, eggs and 4 tbsp of oil, whisk until this is smooth.
Pour 1/3 cup of batter per cake unto a hot (sizzles when you put a drop of water onto it), greased griddle or skillet. Flip once and cook through, about 4 minutes.
Serve with butter and honey.

This is an often requested breakfast by our kids. It started years ago when I read the story of hoecakes in a Martha Stewart "presidential" issue. These were favorites of George and Abraham as they often had to eat out in the open with nothing much for cooking tools so a knife or hoe worked as the griddle held over the fire (although they never ate a meal with each other). When our kids' friends are over, they always look at me shocked when I ask if they'd like hoecakes for breakfast.
