1# Raw Spinach
4 green onions- sliced (tops too)
4 hard cooked eggs- chopped
Bacos- or crumbled fresh cooked bacon
sliced ripe olives or fresh mushrooms (optional)

Dressing:
1/2 cup sugar
1 tsp. salt (I use less- 1/2 tsp. Lite)
1 tsp. dry mustard ( mustard powder)
1Tbs. grated onion
1 cup salad oil
1/3 cup vinegar (apple cider)

Directions:
Directions:
Rinse and remove stems from 1# raw spinach. Tear into pieces.

Put all the dressing in container, shake well and refrigerate. Shake well before serving.

I often serve this by presenting the spinach in a large bowl and all the other ingredients in smaller bowls so that each person can pick personal favorites.
