1 lb. ground beef (or chicken)
1 lb. box Velveta cheese (grate about 1/2)
1 small onion
1 small can black olives
1 small can mushrooms
1 - 16oz. sour cream
1 10 oz. can Old El Paso enchilada sauce (may wish to add salsa also)
1 pkg. large flour tortillas
salt & pepper

Directions:
Directions:
Brown ground beef in skillet and season to taste with salt, pepper, and onion. Drain off fat. Add mushrooms, olives, 1/2 the sour cream, and 1/4 to 1/2 of the enchilada sauce. Add grated cheese and heat until warm. (You can save out some of the cheese and sprinkle on top later.)

Heat tortilla (about 10 seconds in the microwave) one at a time putting some of the ground beef mixture in each one. Roll up and put in baking dish. Pour remaining beef mixture, enchilada sauce, sour cream, and grated cheese, as preferred over, tortillas. Heat until bubbly in a 350 degree oven, about 20-25 minutes.
