1 stick margarine
1/2 c. sugar
2 eggs, beaten
3/4 c. applesauce
1 3/4 c. self-rising flour

For Topping:
1/2 stick margarine, melted
1/4 c. sugar
1/4 tsp. cinnamon

Directions:
Directions:
In a mixing bowl, cream sugar and margarine. Stir in beaten eggs, then applesauce. Mix well. Fold in flour and mix until batter is uniform. Place mini-muffin papers in mini-muffin pans. Fill papers about two-thirds full. Bake in preheated 425º oven for 15 minutes. Mix sugar and cinnamon in a bowl. Melt margarine. When muffins are done and still hot, dip each in margarine and sprinkle with sugar/cinnamon.
