2 1/2 cups flour
1 1/2 tsp. baking powder
3/4 tsp. salt
1 1/4 cups sugar (divided)
3/4 cup vegetable oil
2 eggs
1 tsp. vanilla extract
8 drops of food coloring (green)
1 1/2 cups Nestles mint-flavored chocolate morsels

Directions:

Combine flour, baking powder, and salt and set aside. In larger bowl, combine sugar and oil and mix well. Beat in the eggs and vanilla extract. If using food coloring or liquid mint flavoring, add that now. Gradually add flour. Stir in chocolate morsels. Shape into balls (the dough will be sticky) and roll in remaining sugar. Bake on an ungreased cookie sheet for 8 to 10 minutes.

The Zogg kids love these. We use miniature chocolate chips and liquid mint flavoring. At Easter we have made them pink and pastel green. At Christmas I use green coloring.
