4 Tbsp. olive oil
2 to 3 cloves garlic
2 cups chopped peppers, (I use 8 jalapenos, 2 chilis and 2 green peppers)
1 1/2 cup onion
4 tsp. canning salt
1/4 cup lemon juice
1 tsp black pepper
chopped cilantro to taste or celery
about 24 medium tomatoes, skinned and chopped.

Saute the garlic, peppers, and onion in olive oil. Add the salt, lemon juice, and cilantro. Add the tomatoes and bring to a boil. Simmer gently for about 5 minutes. If thinner than you like, add a small can of tomato paste. Pack in hot jars and seal. Process in hot water bath for about 30 minutes.
