1 cup SIFTED all purpose flour
1 teaspoon baking power
2 tablespoons sugar
1/2 teaspoon salt
2 eggs well beaten
1/2 cup milk
1 teaspoon vegetable oil
1 cup cooked or canned whole kernel corn, well drained
Vegetable Oil for frying

Directions:
Directions:
1. Sift flour, baking powder, sugar and salt;
2. Combine eggs and milk in a medium size mixing bowl, add sifted dry ingredients and beat lightly to mix, stir in 1 teaspoon vegetable oil and corn.
3. Drop from tablespoon into deep hot fat (375º) and fry until golden brown on all sides. Drain on paper towel, butter and serve.
NOTE: Can be kept warm by placing in 200º oven until all fritters are fried.

You can double or triple this recipe with no problems. Make sure your sift dry ingredients together before mixing them with wet ingredients.
