1 pint boiling water
1 level teaspoon salt
1 1/4 cups plain (not self-rising) cornmeal

Directions:
Directions:
Add salt to boiling water. Gradually mix in meal. Refrigerate at least 20 minutes or overnight. When preparing to cook, slightly knead the mixture and separate it into portions slightly larger than a golf ball. Shape into patties. Place 1 inch of shortening in a skillet. Fry at 375º until golden brown, approximately 5 - 7 minutes. They will begin to float in the shortening when done. Serve with Nero's White Bean Soup. (p. 101)
