1 can Bush's black beans, drained & rinsed
1 can corn, drained & rinsed
1 red bell pepper, seeded & deribbed
1 green bell pepper, seeded & deribbed
1 yellow bell pepper, seeded & deribbed
1/2 c. red (or sweet) onion
1 clove garlic, minced
1 t. cilantro
1/4 c. olive oil
4-5 T. red wine vinegar
1 t. lime juice
freshly ground pepper, to taste
salt, to taste

Directions:
Cut all the bell peppers & the onion into 1/4 inch dice (sized about the same as the corn kernels and beans). In a bowl, combine the bell peppers, onion, corn, garlic & cilantro; toss to mix. Mix the olive oil, vinegar, lime juice, salt & pepper; add to the peppers mixture & toss again. Add the black beans, toss well & serve at room temperature. Tostitos Gold tortilla chips work great with this salsa.

When I was introduced to this dish it was served as a salsa. It could easily be served as a side dish like a cole slaw.
