1/4 c. butter
1-1/2 c. lean veal, pork, beef or chicken
1 c. onions
1 tsp. salt
bouillon in flavor to match meat
1-1/2 c. canned mushrooms
1 can bean sprouts or 1 can Chinese vegetables
dash pepper
2 c. celery cut fine

Thickening:
2 T. cold water
2 T. corn starch
2 tsp. soy sauce
1 tsp. sugar

Heat butter, sear meat without browning - Add onions and fry for 5 minutes. Add celery, salt and hot water (enough to almost cover celery). Cover and cook 5-6 minutes. Add mushrooms and bean sprouts. Mix thoroughly and bring to a boil. Combine and add last 4 ingredients. Mix lightly and cook 1 minute. You can add bamboo shoots and water chestnuts. Serve over rice or chow mein noodles.
