4 lbs. ground chuck ( chili grind),
2 Tbsp. masa harina,
1 large yellow sweet onion chopped,
1 pod garlic chopped (about 8 cloves),
2 large potatoes (baked and cubed), or
12 ounces of frozen Ore Ida Potatoes O'Brien,
2 jalapenos chopped ( seeded optional),
2 Tbsp. cumin,
4 Tbsp. chili powder ( Fiesta New Mexico is best),
4 Tbsp. cinnamon,
1 tsp. cayenne pepper ( or to taste),
2 Tbsp. olive oil

Brown onions and meat in a large pan. In a small skillet place olive oil and spices over high heat, when you can't take a deep breath add to meat. Add potatoes, stir and simmer about 30 minutes, then add garlic and masa, simmer until masa is done, approx. 20 minutes. Taste test and add cayenne and/ or Fiesta New Mexico red chili spice as needed. Serve with pita bread, crispy taco shells, or flour tortillas. Add cheese, lettuce, tomatoes or whatever you like on your tacos.
