2 cups wild rice, washed and dried
2 tablespoons shallots, minced
1/2 cup blanched almonds
2 cups chicken stock
1 stick butter
2 tablespoons chopped onion
2 tablespoons chopped bell pepper

Directions:
Directions:
Saute onions, shallots and peppers until transparent Add rice to the butter and cook until rice begins to split. Add 2 cups chicken stock. Add 1/2 cup blanched almonds. Transfer to baking dish and bake at 300 degrees for about 1 hour and 15 minutes until all the stock is absorbed.
