Ingredients: Five to Six Red Potatoes Five to Six Chicken Thighs and Drumsticks Sea Salt Olive Oil Onion One can of mild enchilada sauce Rosemary

Directions:For the Potatoes:
Cut the potatoes in half. Rub them with olive oil and sea salt. Add pepper if you wish and sprinkle with rosemary. Put in the oven set at 400 degrees and cook for 30 minutes or so.
For the chicken:
If you like onions, slice an onion or two into a large frying pan with olive oil and cook until the onion is translucent or even caramelized. Set the onions aside.
Brown the chicken in the olive oil. Add the onions.
Add the can of mild enchilada sauce. Cover and let simmer as long as you wish (at least 30 minutes) turning the chicken over every once in a while.
The longer it cooks, the better it gets. |
