1 LB Spanish sausage
1 cup black beans [frijoles]
¼ cup red pepper, roasted and skinned
1 cup corn kernels [maize]
¼ cilantro
1 Tbs. olive oil
Salt and pepper
Directions:
Directions:
Remove sausage from casing; sauté; drain fat, process to blend. Mix beans, red pepper, corn, cilantro, oil and salt and pepper to taste. Place a scoop of sausage and a portion of bean/corn mixture on dish. Swirl flavored/colored cream on plates - to own liking.
