2 lb. of parsnips
2 lb. potatoes
1/3-1/2 clip heavy cream
‘/ stick butter
salt and freshly ground pepper
1 Tbs. ground nutmeg
1 LB grated cheddar cheese
Directions:
Directions:
Peel parsnips and potatoes; cut into small pieces; cover with water until tender and drain. Whip potatoes, parsnips, butter, and cream; season with salt pepper and nutmeg to the consistency of mashed potatoes. Butter a 9X13 baking dish; layer bottom with parsnip potatoes mixture; top with half of cheese; repeat layers with cheese on top. Dot with additional butter; and bake at 350 for 15 minutes.
