For every 9x13 casserole:
1 stick butter (melted)
1/2 cup flour
4 cups whole milk (or whatever you use)
smoked paprika
5 lb. bag of potatoes - peeled and sliced

I usually use 10 lbs. of potatoes and triple the cream sauce because there is a bit more potatoes than will fit in 2 9x13 pans and I use extra cream sauce on extra potatoes.

PREHEAT OVEN TO 350º


Melt butter in largest sauce pan. Sift a little of the flour in at a time (so it doesn't get lumpy), using a wooden spoon to mix flour in. Once all four is combined, warm all of the milk in microwave. Slowly add 1 cup of the milk stirring to combine with flour and butter, once mixture is smooth, slowly add the remaining 3 cups of warmed milk. Heat on medium until sauce starts to bubble. Start with a layer of sauce on bottom of 9x13 pan. Layer potatoes, sauce, potatoes, etc. finishing with a layer of sauce. Sprinkle smoked paprika. Cook uncovered for 1 1/2 hours. Let sit for 5 minutes before serving in order for liquid to congeal.

I just started using the smoked paprika and it's favor and cooking scent is fabulous! Mom noted to peel the potatoes the night before and put them in the casserole dish and just cover them with water. Pour water out into a large measuring bowl to determine exactly how much sauce you will need. Recover potatoes with water to keep them from browning overnight. Brilliant! P.S. This is the same cream sauce that Mom used on the chicken casserole except you substitute 1 cup of dry white wine for 1 cup of the milk.
