3 tbs butter
1 small onion diced
3 tbs flour
2 tbs Dijon mustard
2 c warm milk (preferably whole milk)
1/4 tsp thyme
2 bay leaves
2-3 c shredded cheddar and Monterey jack (combined)
1/4 tsp hot sauce
1/4 tsp Worcestershire sauce
1 lb. shells
1/2-1 c Italian bread crumbs
1 tbs olive oil

Directions:

Heat oven to 400º
Cook Pasta according to package directions.

Melt butter over medium heat. Add onions and saute until soft about 4-5 minutes. Stir in flour and cook for 1 minute. Stir in mustard. Using a whisk slowly add in warm milk. Once milk is combined add thyme and bay leaves, bring to a simmer. Reduce heat to low and simmer slightly for 15 minutes. Stir in cheese, hot sauce and Worcestershire. Once all is incorporated pour over cooked pasta.

Spread pasta mixture in a lightly greased 11 x 7 inch pan.

Combine bread crumbs and olive oil-spread over pasta mixture.

Bake in oven uncovered for 15 minutes or until bread crumbs are browned.
