1/2 cup walnut halves
1 1/2 teaspoons coarse salt
1 lb. mixture of haricots vert and yellow wax beans
½ pound sugar snap peas
1 tablespoon finely chopped shallot
1 teaspoon Dijon mustard
2 tablespoons champagne vinegar
¼ teaspoon freshly ground pepper
3 tablespoons walnut oil
1 pomegranate, seeds only

1. Heat oven to 350° Place the walnuts on a baking sheet, and toast until they are fragrant and browned, about 10 minutes. Set aside to cool.

2. Fill a large bowl with ice and water, and set aside. Bring 3 quarts of water to a boil over high heat. Add 1 teaspoon salt and the beans, and cook until just tender, 3 to 4 minutes. Transfer to ice bath. When cool, drain beans, and dry on a towel.

3. In a medium bowl, combine the shallot, mustard, champagne vinegar, remaining ½ teaspoon salt, and the pepper, and whisk to combine. Add the oil in a slow stream, whisking constantly. Toss the beans with dressing.
